This is a one-pot meal that should take, at the most, 15 minutes to throw together. The results, however, would suggest otherwise. This dish is also a great example of the interesting combination of fish and cheese. Historically, the Greeks have had a long love affair with cheese, and it is used in many dishes where it would be absolute heresy in other cuisines. I’m sure after trying this recipe you’ll side with us. Of course, I am a little biased.
About 1 cup caramelized garlic (store bought)
With a slotted spoon, transfer the garlic cloves to a cutting board, allowing all of the oil to drain back into the container. Chop the garlic fine (or purée it in a mini food processor). Top with reserved oil and store in the refrigerator.
