Recipe Serves: 8 to 12
A note from Gael:
Grandma used a stick of butter to make this dish. My own fat-phobic version of this old-fashioned family sweet will warm your heart without taxing the arteries.
Fruit Crumble Ingredients:
- 3 pint boxes of blueberries or 4 cups sliced plums, nectarines or Granny Smith apples
- 1/2 cup of sugar (3/4 if the fruit is sour or very tart)
- Juice of half an orange
- 1 tablespoon instant tapioca
- 3/4 cup all-purpose flour
- 1/2 cup brown sugar
- 1 tablespoon orange juice
- 1/2 cup uncooked oatmeal or Grape-Nuts
- Low fat cooking spray
fruit crumble instructions:
- Set oven at 350°. Spray 8 x 8 glass baking dish with cooking spray. (or brush with softened butter, if you must)
- Wash berries or fruit and slice if it's nectarines or apples (1/4" slices for nectarines, thinner for apples). Put fruit in a bowl, add sugar, 1 tablespoon orange juice and instant tapioca, and toss. Spoon fruit into baking dish.
- Mix brown sugar and flour by hand in another bowl or pulse in the food processor.
- Add oil and 2 tablespoons orange juice and mix or pulse again until it bunches up a bit. Stir in oatmeal or Grape Nuts.
- Spoon crumbly topping over the fruit, covering as much as you can.
- Bake in 350° oven 20 to 30 minutes until fruit feels soft to the fork and the top is a little golden.
Fake whipped cream ingredients:
- 2/3 cup no-fat plain yogurt
- 1/4 cup brown sugar
- 1 teaspoon vanilla
- 1 teaspoon dark rum (optional)
Fake Whipped cream instructions:
- Stir brown sugar, vanilla and optional rum into yogurt in a pretty pitcher or small bowl.
- Wrap in plastic wrap and let sit in the refrigerator at least 20 minutes to melt sugar. Stir again before serving.
To Serve:
Top the crumble with whipped cream or crème fraiche, if you like.
