A note from Chef Han:
This is a refreshing salad that can be easily whipped up any time – but I enjoy it most on warm summer days. Double or triple the recipe for a crowd and then, relax. Enjoy the season because autumn always comes too fast!
Ingredients:
- 1 cup fava beans, blanched and shucked
- 1 cup sugar snap peas, blanched and cut in half
- 2 sprigs of mint, chopped
- 2 sprigs of basil, chopped
- 1/2 cup feta cheese, diced
- 4 tablespoons olive oil
- 4 tablespoons lemon juice
- 1/2 cup croutons
- Salt, to taste
Combine all ingredients in a bowl and serve immediately.
